Clos Marey-Monge Émilie 2021 and Chocolate Lava Cake: A Smooth and Decadent Pairing

In honor of Émilie Monge, previous owner of Château de Pommard and wife of Nicolas-Joseph Marey, our Émilie cuvée embodies a wine that is both fresh and elegant. With hints of blackcurrant bud, cherry, and a subtle peppery touch, this wine promises a harmonious pairing with chocolate. Ingredients (serves 2 persons)

1 egg

50g unsalted butter

50g dark baking chocolate

50g icing sugar

15g all-purpose flour


1 - Preheat your oven to 200°C (Gas Mark 6-7). In a bowl, break the chocolate and slice the butter into small cubes. Melt the mixture in a bain-marie, then stir until blended.

2 - In a mixing bowl, add the eggs and sugar, and whisk until light and fluffy. Add the flour, then stir. Finally, add the butter and chocolate mixture and stir until the mixture becomes a smooth batter.

3 - Pour the batter into a pre-buttered mold and bake for 7 minutes at 200°C (Gas Mark 6-7). Check the consistency with the tip of a knife: your cake should be cooked on the edges but still gooey in the center.

4 - Let it cool, and serve your chocolate lava cake while still warm, accompanied by whipped cream or vanilla ice cream.

For an extra touch of indulgence, you can add a square of hazelnut, caramel or a raspberry in the center of your lava cake halfway through baking. Delight guaranteed!
