Soils

Although it is still widely misconceived to be less noble than other local grape varieties, Aligoté has prospered throughout Burgundy since the 17th century thanks to the diversity of the region's terroirs. This white grape grows mainly on limestone-rich soils, composed of marl and clay. The rich and round texture with a mineral edge shows the capacity of this typically Burgundian variety.

Organic certified (AB). Hand-harvested organic grapes. Alcoholic fermentation with indigenous yeasts and aging in the same 350L French oak barrels. Malolactic fermentation. Aging on fine lees. Fining and light filtration before bottling.
